BBQ Chicken Salad



A colorful salad loaded with delicious flavors that will not leave you hungry! Crisp chopped romaine lettuce gets topped with slices of grilled chicken, black beans, sweet corn, Mexican cheese, fresh avocado, crunchy tortilla strips and a tangy homemade BBQ dressing.

1 lb.  Grilled chicken breast, pre-cooked, sliced                  
1/2 cup  Robert Rothschild Farm Anna Mae's Smoky Sweet BBQ Sauce              
3 or 4  Romaine, hearts, chopped
1 (15 oz.) can  Corn, drained                                  
1 (15 oz.) can  Black beans, drained and rinsed    
1 cup   Tortilla strips                                    
1 cup  Mexican cheese blend, shredded  
2  Avocados, sliced                                            
1/2 cup  Sour cream                                      
2 Tbsp.  Milk                                         
1/4 cup  Robert Rothschild Farm Anna Mae's Smoky Sweet BBQ Sauce



Whisk together all of the dressing ingredients in a small bowl and set aside. In a medium bowl, add sliced chicken and BBQ sauce and toss to coat. In a large bowl, add romaine, corn, black beans, tortilla strips, and cheese. Mix to combine. Top salad with sliced avocado and BBQ chicken. Drizzle dressing over salad.
