Garlic Horseradish Grilled Roast Beef Sandwiches

1/2 cup            Robert Rothschild Farm Toasted Garlic Horseradish Dip

8 slices            Sourdough bread

4 slices            Cheddar cheese

1 lb.                 Roast beef, thinly sliced

1/2                   Red onion, thinly sliced

1/2 cup            Arugula

2 Tbsp             Butter, softened


Spread butter on one side of each slice of bread. On the other side of each slice, spread Toasted Garlic Horseradish Dip. Top each of four bread slices (on horseradish dip side) with 1/4 of the roast beef, onion, arugula, and cheese. Top with remaining bread, horseradish side down. In a large skillet over medium heat, cook sandwiches until golden brown, about 2 minutes per side. Serve hot, with extra dip if desired.
