Cucumber Cups with Lobster
Salad
Ingredients
- · 1 pound frozen lobster meat, thawed and drained
- · 1/4 cup mayonnaise
- · ¼ teaspoon paprika, to taste
- · 2 large cucumbers
- · Yellow Bell Pepper, optional
- · Salt and pepper to taste
Directions
- 1. Bring a pot of water filled with 1” of water to boil and cook the lobster until bright red, about 15 minutes. Drain, let cool, crack all the shells, and remove the meat and any tomalley and coral. Once the lobster is cool, chop and mix it with the mayo, salt, pepper, and paprika to taste.
- 2. With a melon baller, scoop out the center of the cucumber slices to create a small well, making sure you don’t cut through the bottom or sides. Stuff the lobster mixture into the cucumber, garnish the top of each with parsley leaf, and refrigerate until needed.
- 3. Fill the cucumber wells with the lobster mixture. Serve chilled.
