Greek Green Bean Salad

Ingredients
- · 1 Pound Green Beans, trimmed
- · 2 tablespoons EVOO
- · 2 tablespoons fresh lemon juice
- · 1 garlic clove, very finely chopped
- · 1 tablespoon chopped fresh dill
- · Salt and pepper, to taste
- · Feta cheese, optional
Directions
- 1. Bring a large saucepan of water to a boil and blanch the green beans for 5 minutes. Drain and cool under cold running water to spot their cooking (this will preserve their color). Bring another large saucepan of water to a boil again and cook the green beans until tender, not crunchy, 12 to 15 minutes. Drain
- 2. Whisk the olive oil, lemon juice, garlic, dill, salt, and pepper together. Arrange the green beans on a platter and pout the dressing over. Garnish with feta cheese
