Not-so-classic Greek Salad
Ingredients

Salad:

1 Cucumber
-
1 Red Onion Halved
-
2oz Radishes
-
¼ cup Pitted Kalamata Olives
-
1 small handful of mint leaves
-
1 small handful of parsley leaves, chopped

1 small handful of dill, chopped

7 oz feta cheese
-
Dressing:
-
3oz EVOO
-
1 oz Balsamic Vinegar or Sherry Vinegar

2 tsps dried oregano
Directions
- First, make the dressing. Put the olive oil, vinegar, and oregano in a screw-top jar and shake until everything is well combined. Set Aside.
- Using a vegetable peeler, peel alternate strips off the cucumber skin to create a striped effect. Cut the cucumber in half lengthways, slice into half mons, then place in a large salad bowl. Thinly slice the onion and very thinly slice the radishes (use a mandolin if you have one). Add to the salad bowl along with the tomatoes, olives, and herbs, and toss until well combined. Gradually add the dressing, tossing after each addition, until everything is well coated.
